Gazosa La Fiorenzana: Pompelmo

History: Hailing from the Alps of Switzlerand comes a soda that’s been brewed the same way since 1921, a hidden gem tucked away in the little village of Grono located in the Grisons canton. It’s been traveling over 4,900 miles and longer than 14.5 hours to reach America, and now it’s here… for the first time ever. That’s right, Five Star Soda is the first American media outlet to get its hands on Gazosa La Fiorenzana. Francesco Tonna started Gazosa with four original flavors: Pompelmo (grapegruit), Limone (lemon), Mandarino (mandarin orange), and  Lampone (raspberry). Today there are a total of eight. It was in 2002 when ex-footballer (soccer) and Polpenzisch founder Stephan Keller descended from the Netherlands to a bar in Zurich during his time playing for FC Zurich. It was there he sampled Gazosa for the first time. He and his immaculate beard realized immediately he couldn’t let this tasting be his last and decided to begin importing the Swiss soda to the Netherlands, Belgium and Germany. Meanwhile, I didn’t put pants on until noon today. His description of Gazosa paints the company as the epitome of little mom and pop productions. He jokes, “Swiss small is different to U.S. small.” First of all, the business has stayed in the Ponzio-Tonna family and is currently in its fourth generation. According to the Keller, the soda’s label remains unchanged. The company still uses refillable swing-top bottles, a reason, Keller adds, that Gazosa will probably never be available in America. People in America definitely probably don’t have the patience for refillable bottles. The company also has no marketing budget and relies soley on word-of-mouth. But what we all care about is taste. To that, Keller added, “Our flavors are pure and old fashioned, please don’t expect any mixes or addition of vanilla or anything.” Like many soda bottlers outside of America, a majority (six) of Gazosa’s flavors are citrus, including all four original flavors. There’s a simple reason for this. You ready? Keller explains the secret, saying, “Francesco Tonna just used what he had available, experimented and tested the flavors amongst his loyal drinkers.” Mind blowing, right? What we’re getting at is this little, independent Swiss family business has been making soda the old fashioned way with real ingredients for a long time. They might just be one of the soda universe’s best kept secrets.

We wanted our first Gazosa review to remain true to the original four flavors, but also to be a little adventurous. We went with Pompelmo. We figured if you can make a divisive flavor like grapefruit taste good in soda form, then you probably know what you’re doing. Turns out Pompelmo was the second flavor Tonna cooked up and Keller notes it’s actually the original Limone with real grapefruit added to the recipe for some added bitterness. You can actually see bits of pulp in the bottle. If you’re curious (even if you’re not), Pompelmo means “grapefruit” in Italian. As with all Gazosa citrus flavors, the fruit comes “from Italian traders to the south of Switzerland,” says Keller. The flavor is the company’s international best-seller.

Where to get: Gazosa La Fiorenzana is available at many fine Swiss restaurants and cafes. It’s currently distributed only in Switzerland, the Netherlands, Belgium and Germany.

Nose: Grapefruit. Real grapefruit. It’s like cutting open a grapefruit and holding the peel up to your nose. It’s actually pretty remarkable. There’s also some lemon on the nose as well.

Taste: Sweet lemon; tartness; grapefruit; bitter carbonation. There’s a bittersweet element to this soda that authentically ties the whole drink together. The lemon is more prominent in the flavor profile than the nose, but the bitterness of real lemon shines through in combination with the tart sweetness of a grapefruit. The carbonation is a rush of intensity at the beginning of each sip that amplifies the bitter lemon notes. This gradually fades into a sweeter lemon-grapefruit hybrid. The lemon at this point becomes more candied akin to a traditional lemon-lime soda, but the grapefruit really does taste like real grapefruit juice. It’s bitter, then it’s sweet and ends with a mild tartness. An authentic citrus soda.

Finish: Tart grapefruit with a light dusting of sugar that gradually fades. The linger on this is perfect.

Rating: The best grapefruit soda in the world may very well hail from Switzerland. Gazosa has taken one of America’s most divisive fruits and presented it in a soda with juice to taste fresh, enough tartness to remain true to the lemon and grapefruit, and enough sweetness to keep soda purists happy. It’s very rich in citrus. The juices are very prominent. The grapefruit juice really holds its flavor. If you don’t like grapefruit, you wouldn’t like this. But why would you be drinking grapefruit soda to begin with, you weirdo? The lemon goes through more of a transformation, at one point bitter, and at another much sweeter. Americans aren’t used to sodas that garner a large portion of their sweetness from the natural sugars in the juices. Compared to American soda, even some of the artisinal fruit ones, this probably tastes more like a carbonated juice than soda if I had to choose. But then there’s that distinctive soda fizz and sugar rush on some sips. It’s a nice mixture. The Swiss have beautiful women and make beautiful soda. That’s already two reasons for me to find a new girlfriend in Switzerland. This is a rare treat for us at Five Star to review something from so far away. The only sad thing is that unless you’re heading to Switzerland, this will be out of your reach. The one that got away. Maybe you should go chase after it. Just maybe. Fünf sterne.

Roots Soda Co.: Kaleidoscope

History: “The landscape of soda is one of ruin.” Bleak words from the founder of Roots Soda Co., Mark Pool. Even today in the midst of a resurgence where craft and gourmet soda are putting more and more pressure on the big boys, there is still a monopoly. But before the two mass manufactured brands put a strangle hold on the soda market, your favorite ice cold bottled beverage was made at local soda fountains and bottlers were bountiful from town to town. Ingredients were real. Flavors were unique. Competition was fun and not cutthroat. Roots Soda asks, “what if that never went away?” That’s the mentality they have when making soda. Tired of the current state of the industry, Mark Pool founded Roots Soda Co. in April 2012 in Edinburgh, Scotland. It’s an art to them. You get the sense that there’s this intense drive behind the company. This mission to bring soda back to its roots. They note on their website that they want “to make the best soda possible using and honouring only the best ingredients, and sending it off into a future yet unimagined.” I like to read that quote set to triumphant piano music. Are these guys soda jerks or power ballad writers? One thing’s for sure: they’re motivated to create. Pool notes “At Roots it’s not so much about one ingredient standing out, it’s about the ingredients coming together to make something new.” Pool initially sought to create a carbonated lemonade, a popular flavor outside of America, but felt more inspired by cola and how all of its flavors coalesce to form a signature taste. That really appealed to Roots and led to its two flavors. As you might expect, they’re well thought out, a little strange, and a lot inventive.

Hoodoo and Kaleidoscope. No, those are not the names of strippers at the dodgy club downtown. They’re the two flavors Roots Soda Co. produces. “The names for soda seemed a bit tired,” Pool adds. Hoodoo came first. Pool likens it to Jekyll and Hyde. It’s a soda that both burns and refreshes. Perhaps its no surprise then that Hoodoo took months to perfect. Kaleidoscope is the golden child of the bunch… at least it was initially. The first test batch came out perfect. According to Pool, the flavor was designed to evoke memories of childhood summers or going to a music festival for the first time. But Pool can’t take credit for the idea behind it. It was his buddy Jon Seller who “suggested a soda with strawberry, orange, basil and balsamic vinegar.” It tested off the charts at the farmers market. The problems came later and on a bigger scale. Strawberries proved to be a real bitch for Roots Soda. Basically they had to either double the amount of strawberries to maintain the soda’s optimal flavor and struggle with money or stick with the original recipe, lose a little bit of quality and hit their margins. Ultimately, Roots went with option one and had to re-arrange “everything” to make the money work. “We felt that there is too much stuff that gets made just to turn a profit. We wanted to make something we genuinely cared about,” said Pool. One thing’s for sure: these dudes have guts and they’re not afraid to screw up. They’ll have more flavors out in the future. Knowing their precision and high standards, it’ll likely take some time. Until then, we present to you: Kaleidoscope.

Where to get: In keeping with their old school vibe, currently Roots Soda is only sold at physical locations. And unfortunately, only a lucky few in the United Kingdom have access. If you’re in the area, here’s a list of where to find the goods. The company hinted online sales may be coming, so always be on the lookout.

Nose: Very tropical. Like a fruit punch. There’s a vey distinct smell of mango in this bottle. That’s interesting because there’s no mango in Kaleidoscope. It’s really pleasant though. Definitely smells like something fruity you used to drink as a kid.

Taste: Tropical juices; orange; balsamic; mild tartness. This starts out with those same tropical notes you smell when you hold Kaleidoscope under your nose. Like a fruit punch in the beginning that smoothly transitions into more natural flavors of juice. That fruit punch flavor really reminds me of Fruitopia Fruit Integration, a tropical soft drink from the 90’s. You can really taste the authentic orange juice at the end of each sip too. Orange is the most prominent of the ingredients in this you’ll taste. The natural juices render the carbonation very light, almost frothy with tiny bubbles. The tartness of the balsamic and orange provide a nice balance with the strawberry. For a soda with balsamic vinegar, this doesn’t taste like balsamic vinegar. That should make most drinkers happy. You’ll primarily taste tropical fruit punch that gets balanced out with tart, slightly acidic tasting notes.

Finish: Slightly bitter orange. This is where you can taste the basil, ever so slightly. There’s a little bit of an herbal flavor with the orange too.

Rating: For a soda with only a handful of natural ingredients, Roots Soda Co.’s Kaleidoscope tastes surprisingly like a more mature version of fruit punch. The orange juice is the most prominent element in the soda, interacting with the strawberry to impart a sweetness and the balsamic to provide some bitterness. This is sweet, then tart. The amount of sugar isn’t overpowering. In fact, it works really nicely. The flavors here are really dynamite. Balsamic is an ingredient that might scare some people because of its strong bittersweet flavor, but it’s not strong enough in the flavor profile here to make you notice it. This doesn’t have any sort of vinegar taste. What the balsamic does is help provide some tartness with the orange to balance out the sugar levels. The balsamic here is like the last kid in a big family. It’s there. It has an effect. You’ll probably even like it. But most of you will forget about it. And one day it’ll end up writing soda reviews on the Internet *cries*. This is a modern-day gourmet fruit punch-esque artisanal soda that touches all the right fruity notes with an impressively small list of ingredients. I wouldn’t mind tasting the strawberry profile a little bit more, but the use of orange is exquisite. This is truly one of the most inventive and flavorful fruit sodas out there. We can’t recommend it enough. Roots Soda Co. is currently a two-soda business in Edinburgh, Scotland. If they keep making flavors as good as Kaleidoscope, new creations will be inevitable. We hope they’re just getting started.

Pure Sodaworks: Apple Pie

History: You hear the crickets chirping as you gaze through the forest out into the sunset, the clouds looking like fluffy biscuits charred with intense purples and reds. The evening dew is beginning to collect on each blade of grass. You hear the buzzer on the oven and know warm apple pie is minutes away. Life is simple in Chattanooga, Tennessee. The soda jerks at Pure Sodaworks want to maintain that simplicity in each soda they produce. And that warm apple pie? They wanted you to be able to drink it. But if it weren’t for a series of events, Tennessee’s most notable craft soda brewers might never have come into existence. First, there was Everyday Eclectic, Matt and Tiffany Rogers’ artisan soap and candle shop that opened in 2007. It’s still going strong today. They sell all kinds of southern goodies there, like maple bacon candles. I know what you’re thinking, but my girlfriend is already clearing our closet out to buy all of them, so don’t even bother. Well, in 2011 Everyday Eclectic moved into Chattanooga’s small business incubator. Also in the same building? Lots of food companies. “Food always win,” Matt Rogers quips. Next, there was the day at the coffee shop. Dating back even before Everyday Eclectic, Rogers stopped into a local coffee shop and ordered a standard cup. While preparing his coffee, he overheard a customer order a lavender Italian soda. “That sounds amazing,” he recalled thinking. The idea stayed with Matt and Tiffany, and with the influence of all the food-centered small businesses around them, they started brainstorming ideas within that industry. “We wanted to figure out something new that was already in line with what we were doing” in terms of using all-natural ingredients, says Rogers. To put it simply, they really just stumbled into soda. Matt started researching how it was made back in the days when soda was served at pharmacies in order to make the medicine palatable using natural herbs and spices. The couple wanted to pull from that era, but modernize it for today’s audience.

Next, Matt and Tiffany started to experiment with flavors. After positive feedback from friends, they decided to make the leap into the soda business, and in 2011 Pure Sodaworks was born. Tiffany picked the name, Matt designed the branding. They started with serving fountain soda at their local market and due to high demand, realized bottles needed to happen next. That led to a successful Kickstarter that raised over $23,000 and from that point there was no going back. Today, Pure Sodaworks is a three-person operation still trying to meet that demand. Initially, over 40 different flavors were brewed and tested, and then narrowed to six. Without a doubt, the most American of the bunch is apple pie, the soda we review today. “We wanted to come up with a more clever name, but it tastes like apple pie,” Rogers adds. The ingredients are simple and real: carbonated water, cinnamon, vanilla and apple cider sourced from a local orchard in Cleveland, Tennessee. The soda took home second place in the people’s choice category at the 2015 Homer Soda Fest. It’s a nonconventional flavor with actual ingredients you can buy at the grocery store. And that’s what Pure Sodaworks prides itself on, making unique flavors that are rooted in trying to be delicious instead of relying on novelty or gimmicks.

Nose: Apple juice; soft vanilla; light cinnamon. Smells like the best apple juice you could ask for with maybe a hint of creaminess to it.

Taste: Cinnamon; sugar; apple pie. Oh man, this is pretty spot on in terms of tasting like apple pie. The apple flavor is distinctive. There’s a creaminess to it that tastes identical to that traditional apple gooeyness found inside a pie. The first thing you’ll notice is the carbonation. It’s rapid and full of fine bubbles that taste like they’ve been individually coated in cinnamon sugar, yet there’s also a tartness to them. The bubbles quickly peel back to reveal a layer of apple pie flavoring with notes of mild apple juice, sweet cinnamon and slightly creamy vanilla. The sugar in Pure Sodaworks’ Apple Pie Soda is sweet, but the carbonation and cinnamon work in tandem to not let it get out of hand. Bottomline: if someone asks what this tastes like, you won’t have a problem saying apple pie.

Finish: Like eating a piece of apple pie. You get that flakey vanilla crust and cinnamon sugar-apple combination. Spot on.

Rating: Believe it or not, there are a lot of sodas out there that try to replicate the flavor of pies. Few do it with the sophisticated flavor profile Pure Sodaworks has brewed up in their Apple Pie Soda. This is a soda that accomplishes exactly what it sets out to be, does it with only a handful of real ingredients, and doesn’t hide what’s in the bottle. That’s admirable no matter what the quality of the liquid is inside. Luckily, for all soda drinkers, this is a jackpot. It’s tart, sweet, authentic, flavorful, and slightly creamy on every sip. It’s a whirlwind of flavor. The mild creaminess of the vanilla works perfectly with the apple juice to give off that classic gooey apple pie filling flavor. The cinnamon and sugar compliment each other and interact with the tartness of the apple and the soda’s carbonation to give a balanced mouth feel. It’s hard to critique this. If I had to amend anything, maybe cut back on the initial wave of tart bubbles and dial up the vanilla profile ever so slightly. You’d be hard-pressed to find a soda that imitates a pie flavor as well as this one. This is the soda you ask out on a second date and the one you bring home to the family. Soda connoisseurs of all ages should put it on their list. Welcome to the five-star club.

Virgil’s: Special Edition Bavarian Nutmeg Root Beer

History: The Berlin Wall had to come down to make this root beer happen. Well, sort of. Virgil’s is one of the most popular soda brands in the world and Virgil’s Special Edition Bavarian Nutmeg Root Beer has quickly become revered in the craft soda community, both for its unique look and flavor. But this new cult classic has origins all the way back in East Germany, home of some of the world’s greatest beer. According to Reeds, Inc. (the company that owns Virgil’s) CEO Chris Reed, after the Berlin Wall came down, the former owner of Virgil’s, Ed Crowley, was able to work with a man in Germany who had very special water. According to Reed, this water “had some kind of strange properties and secret health abilities; it was extraordinary if not weird, like some kind of reverse magnetism.” Sounds familiar. Crowley decided to use this water to create a micro-brewed Bavarian style root beer complete with a swing-top cap. What really differentiates this root beer from others is the all-natural ingredients sourced from around the world, most notably nutmeg from Indonesia. “It’s subtle but, makes a big difference in flavor,” says Reed. Other ingredients include bourbon vanilla from Madagascar, licorice from France, anise from Spain and cinnamon from Ceylon. Like its parent company Reed’s Inc., famous for their ginger brews, Virgil’s sodas are known for their all-natural ingredients and also for not using preservatives, caffeine, gluten, or GMO’s. The company strives to create sodas the way they used to be made 200 years ago with the freshest herbs, spices, fruits, and sometimes even mystical German water. Reed muses, “this root beer came out almost magical.” Let’s taste the magic.

Where to get: Virgil’s is commonly found in health or natural food stores. You can use the company’s store locator to find the closest retailer near you. That said, this particular special edition root beer is a little bit harder to find. Rocketfizz often carries it. Online is another good resource – check out the company’s website, as well as Soda Emporium.

Nose: Strong nutmeg; cinnamon; vanilla.

Taste: Spices; cloves; nutmeg; vanilla; cinnamon. This is extremely smooth and filled with flavors. Spices permeate the mouth every sip. Virgil’s Special Edition Bavarian Nutmeg Root Beer contains a pantheon of various spices. I first get mild cloves and nutmeg, spun in a cocoon of cane sugar. Definitely herbal, but still sweet enough to enjoy even for those who aren’t fans of earthier sodas. It takes a couple sips, but there are rich notes of vanilla throughout the drink, as well as cinnamon, anise and mint. It’s creamy, but not too much to prevent it from being smooth. All the cogs work together to make this machine work. Immaculate.

Finish: Sweet birch that gives this its root beer flavor, followed by light molasses and vanilla. Smooth and doesn’t linger long.

Rating: Virgil’s Special Edition Bavarian Nutmeg Root Beer is quickly building a reputation as one of the most coveted root beers on the market. And for good reason. This is flavor town, USA. The flavors are unique, blend well together and would get a smirk even from the most culinary-inclined audiences. I had some hesitation because of the long list of spices in this, but they really work well together and offer a change of pace in root beer with a full-bodied flavor and just the right amount of smoothness. The vanilla is sweet and creamy. The nutmeg provides a mild earthiness. The cinnamon and cloves pack additional dosages of deliciousness. Everything works here. Kind of like the opposite of the married couple in the apartment next door. Sometimes I tell myself they’re screaming they love each other. But I doubt it. I’ll tell you what I love though; I love this soda. This is root beer of the highest quality and an achievement in craft soda brewing. This is root beer with the flavor profile of a fine-dining experience and the drinkability of a soft cola. Do yourself a favor and shell out the money to try this. Root beer is the king pin of craft soda and Virgil’s Bavarian Nutmeg Root Beer wears a crown.

Garwood’s Ginger Beer

History: Ginger beer is one of the most adult craft sodas on the market. But don’t tell that to Salt Lake City’s Thomas Garwood, who used to drink the stuff down as a kid. Still a young adult at 28, Garwood was no longer satisfied with the state of ginger beer. He felt he’d grown up, but his favorite soda hadn’t. It’s not me, babe. It’s you. “As an adult I’ve never been able to find a ginger beer that was quite spicy enough,” he says, his phone cutting in and out as if he was communicating from an AOL dial-up landline. He’d also become disenchanted with studying music in school. So Garwood, already experienced in the food industry, went to work. But he needed some help. Garwood’s Ginger Beer probably wouldn’t exist had it not been for a successful Kickstarter campaign that raised $5,000. When it came to the soda, he didn’t just want more spice. He wanted more flavor. Fresh flavor. Garwood’s Ginger Beer is made with 30% real juice, using cold-pressed ginger, lemon and lime juices. Garwood made it a point to ensure his ginger beer was wrapped in a bed of natural citrus as opposed to using syrups or extracts. The only other ingredients are carbonated water and cane sugar. He adds, “The purpose of starting this business was to do unique things that you don’t find around a lot.” For example, down the line, he wants to create a malt soda. In the more immediate future, grapefruit or grapefruit-ginger may be on the table. He says so far, his two-man team (Garwood and his wife) have gotten a great response locally in Salt Lake City. Time to try this out. Better put on my adult pants for this review.

Where to get: Due to the small size and recent launch of the company, Garwood’s Ginger Beer is still only sold locally in Salt Lake City. For those of you stopping through, you can pick up a bottle at Liberty Heights Fresh Market or Caputo’s downtown market. Garwood was confident online sales would eventually happen. Nose: Skunky, almost like a citrusy Heineken or Modelo beer. Lime and lemon juice are also prevalent. The ginger smell is relatively mild.

Taste: Ginger; lemon juice; lime juice. This tastes extremely fresh. You can taste all three of the main juices that make this up. Each bottle of Garwood’s Ginger Beer contains 30% juice, yet it tastes higher. You start out with a sweet, but tart lemon-lime flavor. The lime has more of a punch, but the lemon has more staying power in the flavor profile. The ginger comes in last. It’s not particularly hot, but full of flavor. This is light and tart, an extremely refreshing take on ginger beer that relies heavily on lemon and lime flavors to supplement the ginger.

Finish: Slightly skunky lime with just a tinge of citrus-infused ginger that coats the tongue. Some people are into skunky tastes, but others may be turned off.

Rating: Ginger beers are almost always engineered to be enjoyed with alcohol and for that reason, they almost always taste better with alcohol. I think this is the first ginger beer I’ve had that I would say is better on its own. The ginger, lemon and lime juices work perfectly together to form a refreshing citrus elixir. To me, this is like a ginger-infused lemonade with some notes of lime. Now this is a little skunky, something unusual in ginger beers, but that’s really an aside. Some may disagree, but I think it adds to the flavor. All three main juices stand out in a unique way in the flavor profile. The lemon is refreshing and full of citrus that forms the base of each sip. The lime is brief but adds a burst of tart, bold flavor. And the ginger tastes so fresh and zesty that it’s almost impossible not to be impressed. This won’t make your eyes water with heat, but you will cry if you don’t try one. This is like when a hot hipster girl transfers to your college in po-dunk nowhere and you realize you’ll be making a lifestyle change. Other girls can’t match her style, looks and sassiness. In similar fashion, I don’t think I can name a more flavorful or better ginger beer than Garwood’s. That’s a bold statement, but this is a bold ginger beer that ascends to the highest peak in its category. This is that hot hipster girl wearing her plaid shirts and shiny leggings. You need her. You need her like you need air. To be fair, I don’t think you’ll need this like you need air. If you do, contact a hospital and scientist. But you’ll need this more than any other ginger beer you’ve had to date. This is one of the newest players in the game and if Garwood’s continues making other flavors, they’ll be one of its heaviest hitters.

Swamp Pop: Noble Cane Cola

History: You sit on your front porch. Fog rises off the lake. You see eyes peak above the surface before descending again into the grassy marsh. Sweat drips from your forehead and spills on to your half buttoned-up shirt. The humidity is smoldering. A love-torn voice echoes in the background from your record player as you reach for your mason jar that’s consumed by condensation. This is Louisiana. And Swamp Pop, started in 2013 by cousins John Petersen and Collin Cormier, is all about creating old school glass-bottle sodas with a distinctly cajun identity. Says Petersen, “We wanted to take soda profiles people were more broadly familiar with, and then twist them with a Lousiana flavor.” In fact, Swamp Pop is a double entendre as both the name of the company and a classic Louisiana style of music. It sort of sounds like the blues meets honky-tonk meets 50’s rock. The cousins knew the cajun influence had a wide appeal across the country, but they wanted to stay authentic. All of their sodas contain 100% pure Louisiana cane sugar from Louisiana farmers, natural flavors and natural color. Petersen says they wanted to make their soda flavors “in layers,” in order to create something a little more sophisticated for the drinker. The company produces six different flavors. Today, we try Noble Cane Cola, Swamp Pop’s twist on traditional cola made with Louisiana Brown Turkey Figs. They also wanted it it taste more herbal than the average cola while still maintaining sweetness. Petersen adds confidently, “The cola is a cola for grown-ups.”

Where to get: Swamp Pop is mostly sold in the gulf coast region and is national to some extent. Cost Plus World Market carries their sodas. You can also buy it directly from their web site. To find the nearest retail location near you, use the company’s online locator.

Nose: Sweet sugar; fig blossoms; candied plums.

Taste: Sweetness; cinnamon; candied fig; mild brown sugar. This tastes unique. Swamp Pop boasts about the Brown Turkey Figs they use in their cola and that must be what I’m tasting here. It’s sweet, but not syrupy. It’s crisp, yet not overbearing. Right away you get a flash of sweetness that flows into a creamy candied fig taste which glides across the tongue. Next comes a wave of carbonation that brings with it robust cinnamon sugar to pair with that unique fig flavor. The closest thing I can compare the fig flavor to is a very rich, sweet, fruity cherry. But that’s still not quite right. It’s just so original. You almost get a little bit of brown sugar too. Incredibly drinkable. The flavors all work here. The Louisiana cane sugar really brings out the fruity fig notes in this truly original cola. Notes of cinnamon and brown sugar undercut the main body of the soda. There’s also the slightest hint of an herbal taste to this, but that’s really an afterthought. All around brilliantly executed.

Finish: Creamy cinnamon and ripe fig that linger briefly before your mouth is ready for another sip.

Rating: Immaculate. Swamp Pop has taken an old favorite, infused it with vintage Louisiana flavors, and yet somehow brought it into the 21st century. Wonderfully original. The Brown Turkey Figs form the base of Noble Cane Cola’s flavor. It’s sweet, different, and even a little fruity. The underlying notes of cinnamon reign in some of the sweetness and make this an easy-drinking soda. It’s even got a nice foamy head due to the company’s use of quillaia, an ingredient more often found in root beers and cream sodas. Enjoy a couple bottles in a sitting or just sip on it to savor the flavors. This works both ways. It’s a cola like you’ve never had, and one your mouth just has to experience. Have you ever made out with someone who was like definitely a couple levels above you, and your mouth didn’t even know things like that could happen inside of it? Me neither. But I imagine the level of joy and surprise in that situation would be comparable. Put on your finest Bayou wear, grab a Noble Cane Cola and watch the gators swim into the sunset. Most of us will have to settle for a YouTube substitute *shudders*, but the point is: this is more than worth your time and money. Louisiana is killing the soda game right now. We endorse this with five stars.

Fest Cola: Bourbon Cream Soda

History: Are you ready for a little southern hospitality? The phrase probably can’t get any truer when talking about Roy Nelson and Fest Cola. And no, not this Roy Nelson. Not only does he craft his soda from the bayou of New Orleans; he also has a Canadian background! So he’s like the nicest southerner you’ll ever meet, eh? Sorry. Had to. Nelson has over 20 years of experience in the food and beverage industry. Wanting to branch out on his own, he chose craft soda for its blossoming opportunities. Fest Cola is actually not just cola. The company makes four flavors. It was important to Nelson that the brand stayed true to the New Orleans community. Each soda is actually named after some aspect or historical figure from the city. As for the flavors, they’re all standards with a unique twist. Almond Cola? Pecan Root Beer? Bourbon Cream soda? Yeah, those are all real things you can put in your body. Nelson says he wanted “flavors for today.” Fest Cola “needed to have a vintage feel, but something really progressive to establish itself.” They’re proud of their product. They aren’t ashamed to boast that they use expensive ingredients and 100% pure Louisiana ground cane sugar. But mostly, Fest Cola is about being original. In the words of Nelson, “We don’t try to be the best. We just try to be the only one.” And we’ve only heard of one bourbon cream soda. So we had to drink in the originality.

Where to get: Fest Cola is sold throughout the Gulf South region, Texas, and Chicago, Illinois. If that seems random, it’s because it is. Bottlers actually don’t have a lot of control where their distributors sell their products. You can also pick up Fest in Rocketfizz shops across the country. The company is setting up a direct order system through their web site, and they hope to have it live by the summer of 2015. In the mean time, you can get it online at Soda Emporium or by contacting Fest directly through their site to arrange an order.

Nose: Intense vanilla; caramel chews.

Taste: Whoa. There’s actually a bourbon flavor to this. Imagine that. It’s immediate on the tip of the tongue and explodes into rich vanilla waves almost on impact. It’s strong and different. But for a man (aka me) with a pastry chef for a mom, it’s strangely familiar. Dare I venture to guess, this may be actual bourbon vanilla. The vanilla profile here is exquisite. Bold, deep and rich that  lasts in intensity only for a fleeting moment before transforming into a softer vanilla flavor reminiscent of sweet bourbon sauces your grandma used to put on sweet treats like apple dumplings or yams. To be clear, this doesn’t taste like apple dumplings or sweet potatoes, but the vanilla-bourbon note on the backend of this soda is very similar to one found in sauces used to accentuate those desserts. The bourbon taste is long and slowly fades into a lighter version of itself. The sugar here is definitely noticable if you search for it, but really blends nicely under the symphony of sweet bourbon.

Finish: Sweet bourbon vanilla that tails off into light, burned caramel. Extremely pleasant. Maybe even a little bit of a powdered sugar note near the end as well.

Rating: The initial sip on this is an explosion of flavor every time. It’s wild and so incredibly fun, which is what soda should be. Fest calls this soda Lulu. You want to date Lulu. Lulu White was a New Orleans luxury brothel owner. So, actually… maybe you don’t want to date Lulu… unless you’re into that. But you definitely want to drink her…. err, I think I’m making this worse. The point is, it is strongly recommended you put this in your body. Bourbon, vanilla and light caramel highlight this wonderfully unique take on cream soda. Its flavors are bold and noticeable on their own, yet blend to create a layered taste you’ve never had before in a cream soda. Now, if you’re not big into strong vanilla, this may not be for you. That said, we’d still recommend it simply for the fact that you’ve probably never had vanilla in a soda in this way. Go out of your way to try Lulu. Do not go out of your way to find her brothel. This is cheaper, lasts longer and afterward you won’t need to see a doctor. Masterful. Put this in your permanent rotation.

Waynesville Soda Jerks: Grape Soda

History: Sometimes you choose the craft soda life and, well, sometimes it chooses you. Wait, are we in a Matthew McConaughey car commercial now? “We fell into it,” says Chris Allen, one of the co-owners of Waynesville Soda Jerks. Chris and his business partner, Megan Brown, always wanted to be self-employed. From Waynesville, North Carolina, they’re surrounded by a great local farmer’s market community. The soda idea slowly grew on them. Literally. Very tart wine berries grew outside their North Carolina home. Chris and Megan wanted to see if they could turn them into something flavorful. So they bought a Soda Stream. Eventually they graduated to more sophisticated flavors and took their stuff to the farmer’s market. That’s all it was intended to be. They just wanted to start an “adult lemonade stand,” said Chris. A few months later in April 2013, they launched a successful Kickstarter campaign. Here’s the crazy thing: they both still work part-time gigs at Frog’s Leap Public House. The two say they’ll be transitioning Waynesville Soda Jerks into a full-time business as 2015 progresses. Every flavor they make is based on local ingredient availability and the seasons. Some of their creations include fruit-based sodas like Strawberry Rhubarb pie and Blackberry Serrano pepper. But one they’re very proud of is a classic that slowly seems to be losing footing in the craft soda community: grape. Chris’s grandmother would make her own grape juice using concord grapes from the family property so the kids around the house would always have something to drink. Chris and Megan worked tirelessly to get the flavor just right. The result is the soda we’re reviewing here.

Where to get: Currently, their sodas are hyper-local around the Waynesville, North Carolina area. The two say they’re working hard to get products approved for distribution. However, they don’t want to spread throughout stores and grocers nation-wide. “We’re not looking to be the next big boy in the soda business,” says Matt. The two feel it wouldn’t be genuine to their local business model. That said, they’re hoping to have their soda available for purchase online by April 2015. Custom orders are available in the short-term by calling (828) 278-8589.

Nose: Welch’s Grape Juice.

Taste: Wow. This tastes exactly like lightly carbonated Welch’s Grape Juice. It’s immaculate. It tastes fresh and authentic. No weird, metallic or artificial aftertaste like most grape sodas. This is a simple soda that doesn’t try to be more than it is, and that’s where it succeeds. It doesn’t have any hidden flavor notes. It tastes like grape, more specifically, real, carbonated grape juice. Don’t think sparkling grape juice. It’s not quite that carbonated. The light carbonation works just right and really lets the grape flavor shine.

Finish: Refreshing; real grape juice; light bubbles that dance on the back of your tongue.

Rating: This is simple, yet brilliant. The flavor is everything grape soda should be. You’ve never had grape soda this fresh. This is the cute girl next door you weren’t sure whether or not had a boyfriend who you asked out and it was everything you imagined. You could drink this in groves. We definitely did. Go out of your way to get this. Bravo, Waynesville Soda Jerks. Literally, no complaints. We look forward to more flavors in the future. We have one bottle of this left. Not for long.
